For the Chili:

• 2 Tablespoons olive oil

• 1 Onion, diced

• 1 Green Pepper, chopped

• 1 Red Pepper, chopped

• 3 cloves Garlic, minced

• 1 pound Ground Beef

• 1 Tablespoon Chili Powder

• 1 teaspoon Cumin

• 1 teaspoon Dried Oregano

• ¼ teaspoon Cayenne Pepper

• ¼ teaspoon Salt

• 1 can (14.5 ounces) Diced Tomatoes

• 1 can (4 oz) Green Chilies, diced

• ½ cup Low-Sodium Beef Broth

• 1 can (15 ounces) Kidney Beans, drained and rinsed

For the Toppings:

• ¼ cup Cheddar Cheese, shredded

• Fresh Cilantro, chopped


1. Heat the olive oil in a large pot over medium heat.

2. Add the diced onion, green pepper, and red pepper and cook until they start to soften, about four minutes.

3. Add the minced garlic and cook for an additional minute.

4. Add the ground beef and cook, breaking it apart with a wooden spoon, until it is cooked through.

5. Add the chili powder, cumin, oregano, cayenne pepper, and salt and stir to combine.

6. Add the diced tomatoes, green chilies, and beef broth and stir to combine.

7. Bring the mixture to a boil, reduce the heat to low, and let it simmer for 20 minutes.

8. Add the drained and rinsed kidney beans and stir to combine.

9. Let the mixture simmer for an additional 15 minutes.

10. Top with shredded cheddar cheese, chopped fresh cilantro, diced onions, diced peppers, or any other toppings you’d like.
