– 2 medium-sized zucchini
– ¼ cup ground beef
– ½ cup shredded Mexican cheese
– ⅓ cup tomato, diced
– ¼ cup onion, diced
– 2 cloves garlic, minced
– 2 teaspoons chili powder
– 1 teaspoon paprika
– 1 teaspoon cumin
– 2 tablespoons olive oil
– 2 tablespoons cilantro, chopped
