Taco Shrimp Cabbage Bowl: A Healthy Alternative to Traditional Tacos

Tacos are one of the most popular Mexican dishes in the United States. They’re a go-to meal for busy nights at home or when you’re hosting a taco night for friends and family. While traditional tacos can be delicious, they don’t always offer the nutrient-dense ingredients we need to stay healthy. Enter the taco shrimp cabbage bowl. This unique take on traditional tacos offers a delicious and nutritious alternative to an old favorite.

What is a Taco Shrimp Cabbage Bowl?

A taco shrimp cabbage bowl is basically a taco without the tortilla. Instead of a taco shell, all the ingredients of a taco are placed in a bowl filled with a bed of shredded cabbage. This bowl contains all the essential elements of a taco like shrimp, tomatoes, peppers, onions, and seasonings, but with the added benefit of healthy, nutrient-dense cabbage.

How to Make a Taco Shrimp Cabbage Bowl

This taco shrimp cabbage bowl recipe is simple and delicious. Not only is it healthy and filling but it can be made in less than 30 minutes, making it perfect for busy weeknights. Here’s what you’ll need to make it:

-1/2 head of cabbage, shredded
-1 lb. of shrimp, peeled and deveined
-1 can of black beans
-1 can of diced tomatoes
-1 bell pepper, diced
-1 onion, diced
-1 tsp. of chili powder
-1 tsp. of garlic powder
-1/2 tsp. of cumin
-1/4 tsp. of black pepper
-1/4 tsp. of salt
-2-3 TBSP of olive oil

1. Begin by prepping all of your ingredients. Shred the cabbage and dice the bell pepper, onion, and tomatoes. Peel and devein the shrimp.

2. Heat a large skillet over high heat. Add 2-3 TBSP of olive oil to the pan and allow it to heat.

3. Once the pan is hot, add the diced onions and bell peppers. Sauté for about 5 minutes until the vegetables are soft.

4. Add the garlic powder, chili powder, cumin, salt, and pepper and stir everything together.

5. Add the diced tomatoes, black beans, and shrimp to the pan. Stir everything together and cook for about 5 minutes or until the shrimp is cooked through.

6. Put the shredded cabbage in a large bowl and top it with the shrimp and veggie mixture. Serve immediately and enjoy!

Why You Should Try this Taco Shrimp Cabbage Bowl

This taco shrimp cabbage bowl is a healthy alternative to traditional tacos because it’s packed with nutrition and delicious flavors. The added bonus of a nutrient-dense cabbage base makes it an even better option. Shrimp and peppers are a great source of lean protein and the black beans provide an excellent source of fiber.

Taco shrimp cabbage bowls are also a great way to use up leftover ingredients. If you have some leftover veggies from another recipe or canned beans that need to be used up, this is the perfect way to do so.
