Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the ground turkey to the skillet. Cook until it’s no longer pink. Break it up with a spatula as it cooks.

3. Add the garlic powder, chili powder, cumin, salt, and pepper to the turkey and mix until evenly combined.

4. Add the bell peppers, black beans, and corn to the skillet. Stir until everything is evenly combined. Cook for about 5 minutes or until the bell peppers are soft.

5. Remove the skillet from the heat. Stir in the tomatoes and vegan sour cream.

6. To assemble the burrito bowls, divide the turkey mixture among the bowls. Top with diced avocado and cilantro, if desired.
