Bacon has been a popular food for centuries and today, it is not just reserved for special occasions like breakfasts or brunches. Bacon is now a favorite snack for people of all ages and this Sweet Bacon Bites recipe is sure to please. Cool and savory bacon is combined with the sweetness of a sugary glaze and then rolled in a sweet and nutty combination of chopped nuts. These bites are simple to make and the perfect snack for any occasion.
To make these Sweet Bacon Bites you will need the following ingredients: 8 to 10 slices of thick bacon, 1/3 cup of light or dark brown sugar, 1/3 cup chopped or crushed nuts (almonds, walnuts or pecans), 1/3 cup sweetened shredded coconut, melted butter or vegetable oil and parchment paper.
Begin by preheating your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and then lightly season the bacon with salt and pepper. Place the bacon slices in a single layer on the prepared baking sheet. Bake for 12-15 minutes or until the bacon is crisp. Turn the bacon over halfway through the cooking time.
While the bacon is baking, you can prepare the glaze. Combine the brown sugar and a tablespoon of melted butter or vegetable oil in a medium-sized bowl and stir together until combined.
Once the bacon is cooked to a crisp, remove it from the oven and transfer it from the baking sheet to a plate. Working quickly so the bacon doesn’t cool, brush the glaze over each bacon slice.
Now you are ready to assemble the Sweet Bacon Bites. Take one of the bacon slices and place a small amount of the nutty, sweet coconut mixture onto one end. Gently roll the bacon slice up and press the ends to seal the bite. Continue with the remaining bacon slices.
Once all of the bites are complete, place the Sweet Bacon Bites back onto the parchment-lined baking sheet. Brush any remaining glaze over the bites and bake for an additional 5 to 8 minutes. When the bites are golden brown and the glaze has caramelized, remove them from the oven and allow them to cool for 5 minutes.
These Sweet Bacon Bites are delicious when served warm, but they can also be enjoyed at room temperature. Sweet Bacon Bites can be served as an appetizer or alongside a main meal. For a delicious summer treat, serve the Sweet Bacon Bites with a scoop of your favorite ice cream.
