Smoky Mushroom Cauli-Lasagna

In a food processor, blend a cup of raw walnuts, a cup of fresh spinach, and 1/3 cup of vegan parmesan. Process until the mix forms a thick paste. Spread the paste evenly on top of the cauliflower-mushroom layer and sprinkle with some vegan mozzarella cheese.

Next, prepare the tomato sauce. In a small saucepan, heat a tablespoon of olive oil and sauté two cloves of garlic until golden brown. Pour in 1 1/2 cups of crushed tomatoes and simmer the sauce for about five minutes. Stir in a teaspoon of oregano, 1/2 teaspoon of black pepper, and a pinch of salt. Pour the tomato sauce over the vegan cheese and walnut-spinach mix.

Finally, add the lasagna noodles. Begin by lightly coating the prepared baking dish with a thin layer of the tomato sauce. Then, layer the lasagna noodles on top. (This recipe calls for about 8-10 noodles, depending on the size of the baking dish.) Cover the noodles with a generous amount of the remaining tomato sauce. Sprinkle some more vegan cheese on top, and cover the dish with foil.

Bake the lasagna for 30-35 minutes, or until the noodles are cooked through and the cheese is melted. Once the lasagna is done, top it with fresh basil and serve warm.
