The beauty of this dish is that the ingredients are all relatively simple and you can find most of them from your local supermarket. Once you have the ingredients, it’s just a matter of prepping them and throwing them together. All you need to do is sauté some chopped onion, bell pepper, garlic, and tomato in a large pot until they are soft. Then add in the chili powder, cumin, and oregano and let it simmer for a few minutes. Next, add in the cooked lentils, pinto beans, black beans, diced tomatoes, and vegetable broth and wait for the soup to come to a light boil.

Finally, lower the heat and add a dollop of chunky salsa and some sliced avocado into the pot. Give it one last stir and let the soup cook for an additional fifteen minutes. Finally, your Taco Verde Filled Soup is ready to be served! Garnish with fresh cilantro, cheese, and lime if desired.

Taco Verde Filled Soup

Ingredients:

-1 tablespoon olive oil
-1 onion, chopped
-1 bell pepper, chopped
-1 garlic clove, minced
-1 tomato, diced
-1 teaspoon chili powder
-1 teaspoon cumin
-1 teaspoon oregano
-1 cup cooked lentils
-1 cup cooked pinto beans
-1 cup cooked black beans
-1 can (15 ounces) diced tomatoes
-4 cups of vegetable broth
-1 cup chunky salsa
-1 avocado, sliced
-Optional: cilantro, cheese, and lime for garnish

Directions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Sauté the onion, bell pepper, garlic, and tomato until softened, about 5 minutes.

3. Add the chili powder, cumin, and oregano and let simmer for an additional 5 minutes.

4. Add the cooked lentils, pinto beans, black beans, diced tomatoes, and vegetable broth.

5. Bring the soup to a light boil and lower the heat to low-medium.

6. Add in the chunky salsa and sliced avocado and stir.

7. Let the soup simmer for an additional 15 minutes, stirring occasionally.

8. Serve with garnish of cilantro, cheese, and lime if desired. Enjoy!
