Taco-Grilled Quesadilla Pie

Who doesn’t love a good quesadilla? For a Tex-Mex lunch, dinner, or snack, a quesadilla is a sure-fire crowd pleaser. So why not make it a bit more exciting with this taco-style grilled quesadilla pie? This delectable melty pie combines traditional Mexican flavors with crispy, fluffy flour tortillas to create a satisfying meal that’s sure to please.

This delicious dish takes about 35 minutes from start to finish, giving you and your party plenty of time to enjoy the fruits of your labor. Plus, it’s incredibly straightforward to make and requires only 8 ingredients: a can of refried beans, red onion, a tomato, taco seasoning, an avocado, cheddar cheese, and two packages of flour tortillas.

Let’s get started! To begin, preheat your oven to 375 degrees Fahrenheit, then heat refried beans in a small saucepan over medium heat. When the beans are warmed through, add about half of the taco seasoning mix to the beans and continue to stir. Spread the seasoned beans over the bottom of a greased 9-inch baking dish and set aside.

Next, slice the red onion and tomato into thin pieces. Then dice the avocado and set aside. Layer half of the tortillas over the refried beans, then spread the sliced tomatoes, diced avocado, and red onion on top. Sprinkle half of the cheddar cheese over the top, followed by the remainder of the taco seasoning.

Lastly, layer the remaining tortillas over the top, then spread the rest of the cheddar cheese evenly over the top. Place the pan in the preheated oven for 25 minutes, until the cheese is melted and the top is crisp and lightly browned.

Serve your taco-style grilled quesadilla pie hot from the oven, sliced into wedges, and topped with diced tomatoes, red onions, lettuce, and diced avocados.
