Ingredients:

– 2 cups cooked black rice or quinoa
– 2 bell peppers, thinly sliced
– 1 tablespoon olive oil
– 1/2 teaspoon chili powder
– 1 cup corn
– 1 avocado, sliced
– 2 tablespoons fresh lime juice
– 1/4 cup vegan sour cream
– 2 tablespoons fresh cilantro, chopped
– 1 jalapeno, thinly sliced
– 1/2 cup crumbled vegan Cotija cheese

Instructions:

1. Preheat oven to 400°F.

2. Place bell peppers on a baking sheet and drizzle with olive oil. Sprinkle with chili powder and toss to coat.

3. Bake for 15-20 minutes, until peppers are slightly charred and tender.

4. Meanwhile, cook black rice or quinoa according to package instructions.

5. In a small bowl, combine lime juice, vegan sour cream, and cilantro.

6. To assemble the bowls, divide black rice or quinoa among four bowls. Top each bowl with bell peppers, corn, avocado, cilantro lime dressing, jalapenos, and vegan Cotija cheese.

7. Serve immediately and enjoy!
