Spicy Tomato-Fish Tacos – Mexican Dish

· 1 large onion, chopped

· 4-6 small corn tortillas


1. Place the cod fillets in a bowl and season with garlic, chili powder, smoked paprika, cumin powder, and garlic powder. Set aside.
2. Heat the olive oil in a pan over medium heat. Once hot, add the onion and garlic and cook for about 5 minutes until they’re softened.
3. Add the tomatoes, lime juice, cilantro, sugar, salt, and pepper to the pan and stir. Bring the mixture to a simmer and cook for 15-20 minutes until it’s thickened.
4. Add the seasoned fish to the tomato mixture and cook for 8-10 minutes until it’s cooked through.
5. Heat the tortillas on a small skillet or in the microwave for a few seconds until warm.
6. To assemble the tacos, place a generous scoop of the fish and tomato mixture onto each tortilla.
