Scallops with citrus and ginger sauce


Step 1

Pat scallops dry with paper towel, then sprinkle with sea salt. Heat oil in saute pan over medium-high heat. When oil is nearly smoking, place scallops in the pan. Sear scallops approx 1 to 2 minutes on each side until almost opaque throughout. Remove scallops to a plate. Reduce heat to minimum and add the orange and lemon juice, orange zest, ginger, and butter to the pan. Whisk the sauce in the pan until it's simmering, than return the scallops to the pan and spoon the sauce over the scallops.
