Ingredients

For the Gnocchi:
• 2 cups ricotta cheese, drained
• 2 large eggs
• 1/4 cup freshly grated Parmesan cheese
• 1/4 cup chopped parsley
• 1 teaspoon salt
• 2 cups all-purpose flour

For the Ragú Bianco:
• 2 tablespoons extra-virgin olive oil
• 1 onion, finely chopped
• 1 garlic clove, minced
• 2 tablespoons tomato paste
• 1/2 cup heavy cream
• 1/4 cup freshly grated Parmesan cheese
• 1/4 cup fresh chopped parsley
• Freshly ground black pepper

Instructions

1. To prepare the Gnocchi: In a large mixing bowl, combine the ricotta cheese, eggs, Parmesan cheese, parsley, and salt until blended. Gradually add the flour, stirring until the dough is smooth and workable.

2. On a lightly floured work surface, roll a portion of the dough into a rope about 1/2 inch thick. Cut into 1-inch pieces and set aside.

3. To make the Ragú Bianco: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 8 to 10 minutes, stirring occasionally until the vegetables are softened.

4. Add the tomato paste and cream and stir until blended. Reduce heat to low and simmer for 10 minutes. Add the Parmesan cheese, parsley, and black pepper.

5. Bring a large pot of salted water to a boil.

6. Working in batches, add the gnocchi to the boiling water and cook for about 5 minutes, until they float to the surface. Remove with a slotted spoon and set aside.

7. When all the gnocchi have been cooked, add them to the skillet with the Ragú Bianco sauce and cook for another 5 minutes until the sauce has thickened and the gnocchi have absorbed some of the flavor.

8. Serve hot with a sprinkling of freshly grated Parmesan cheese. Enjoy!
