-½ cup butter

-1 cup onion, chopped

-1 cup celery, chopped

-2 cloves garlic, minced

-1 cup all-purpose flour

-2 cups clam juice

-2 large potatoes, peeled and cubed

-2 cups half-and-half cream

-2 tablespoons fresh parsley, chopped

-2 tablespoons fresh thyme, chopped

-2 tablespoons fresh tarragon, chopped

-1 teaspoon ground pepper

-2 (10-ounce) cans chopped clams, with juice


1. Heat the butter in a large pot over medium-high heat. Add in the onion, celery, and garlic. Saute until softened, about 5 minutes.

2. Sprinkle the flour over the vegetables and continue to stir for about 2 minutes until lightly browned.

3. Gradually add in the clam juice, stirring constantly to avoid lumps. Bring the mixture to a boil.

4. Add the potatoes and reduce the heat to low. Simmer, uncovered, until the potatoes are tender, about 10-15 minutes.

5. Pour in the half-and-half cream and whisk to combine.

6. Add the parsley, thyme, tarragon, and pepper to the pot. Stir to combine.

7. Add the clams and juice, then increase the heat to medium. Cook, uncovered, for 10 minutes.

8. Taste and adjust seasonings as needed.
