Nacho-Style Shrimp Enchiladas

Nacho-Style Shrimp Enchiladas are a flavor-packed dinner that delivers a unique and fun twist on classic Mexican cuisine. This one-dish meal will have you and your family begging for more. With a few simple ingredients and a few simple steps you can whip up a dish that will have everyone at the table wanting more.

This dish takes only 40 minutes to make and yields 4 servings. You’ll need:

-1/2 pound Vanilla Shrimp, cooked and peeled
-1 (14.5-ounce) can diced tomatoes
-1/2 cup diced red onion
-1 (4-ounce) can diced green chilies
-1 teaspoon chili powder
-1/2 teaspoon garlic powder
-1/2 teaspoon cumin
-1/2 teaspoon paprika
-1/2 teaspoon salt
-6 (6-inch) corn tortillas
-2 cups shredded cheddar cheese
-3 tablespoons butter

In addition to these ingredients you will also need an oven-proof baking dish and a greased baking sheet.

To make this delectable dish, start by preheating the oven to 375°F. In a saucepan, combine the diced tomatoes, red onion, and green chilies, simmering until the onions are translucent. In a separate bowl, mix together chili powder, garlic powder, cumin, paprika and salt.

Next, spread a thin layer of the spiced tomato mixture across the bottom of the baking dish. Arrange the shrimp evenly over the tomato mixture. Then, begin layering the tortillas on top of the shrimp. Spread a thin layer of the remaining spiced tomato mixture over the tortillas.

Sprinkle a layer of shredded cheese over the tortillas and tomato mixture. Then, melt butter in the saucepan and use a pastry brush to brush the melted butter over the top layer of cheese.

Bake the enchiladas in the preheated oven for 25-30 minutes, or until cheese is golden and bubbly. Serve with a side of your favorite Mexican rice dish and enjoy!
