Mmmm avocados are one of the best things for the keto diet. They contain 1.9g of protein, 1.9g of carbohydrates and 19.7g of fat per 100g which is fantastic for Keto.

This recipe is a take on a Mexican scrambled breakfast, we hope you enjoy making it. Rich and creamy avocado over eggs is a tasty way to jump-start the day. Nobody said Keto had to be hard or fun. We love this recipe because it takes less than 20 mins to make.


Mexican Avocado and Egg Scramble


    This is just like making scrambled eggs but with some added ingredients.

    Step 1

    Cut avocado lengthwise around the middle; twist to separate halves and scoop out flesh. Dice avocado and set aside.

    Step 2

    Heat oil in a large skillet over medium-high heat

    Step 3

    Add onion and bell pepper; cook and stir until onion begins to brown, about 4 minutes. Whisk together eggs, cilantro, hot sauce and salt

    Step 4

    Cook and stir gently until eggs are set but still soft. Sprinkle cheese on top.

    Step 5

    Cover for 2 mins; remove from heat; let stand until cheese melts, 1 minute. Divide mixture among four plates; top with reserved avocado.
