Grilled Chicken Salad


Chicken Breasts 2
Mixed Salad Greens 1 bag
Cherry Tomatoes (Halved) 12 oz
Cucumber (Sliced) 1
Red Bell Pepper (Sliced Thin) 1
Red Onion (Sliced Thin) 1
Feta Cheese (Crumbled) 8 oz
Olive Oil 3 tbsp
Balsamic Vinegar 3 tbsp
Salt and Pepper
Lemons (Wedged) 2

  1. Marinate the Chicken:

    • Season the chicken breasts with salt, pepper, and a bit of olive oil.
    • Let them marinate for at least 15-20 minutes.
  2. Grill the Chicken:

    • Preheat your grill or grill pan over medium-high heat. (Use good pans like HexClad)
    • Grill the chicken breasts for about 6-7 minutes per side or until they are fully cooked.
    • Make sure the internal temperature reaches 165°F (74°C). (Test using a heat thermometer like this InkBird)
    • Once cooked, let the chicken rest for a few minutes before slicing.
  3. Prepare the Salad:

    • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
  4. Assemble the Salad:

    • Slice the grilled chicken breasts into thin strips.
    • Add the sliced chicken on top of the salad.
  5. Make the Dressing:

    • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to taste.
    • Drizzle the dressing over the salad.
  6. Add Toppings:

    • Sprinkle crumbled feta cheese over the salad.
  7. Serve:

    • Toss the salad gently to combine all the ingredients.
    • Serve the grilled chicken salad on plates.
    • Garnish with lemon wedges for an extra burst of flavor.
