Ingredients

-8 ounces sphagetti
-3 tablespoons extra virgin olive oil
-4 cloves garlic, minced
-1/2 teaspoon red pepper flakes
-½ cup Dry white wine
-1/4 teaspoon salt
-3 cups fresh spinach
-2 tablespoons chopped walnuts
-2 tablespoon Gorgonzola cheese

Instructions

1. Begin by heating a pot of salted water over medium-high heat. Once boiling, add sphagetti and cook for 8-10 minutes or until al dente.

2. While the sphagetti cooks, heat the olive oil in a large skillet over medium-high heat. Add garlic and pepper flakes. Cook for 1 minute until garlic is fragrant.

3. Next, add wine and salt to the skillet and stir. Allow the wine to reduce for a few minutes until it is thick and syrupy.

4. Once the wine has reduced, add the spinach and walnuts and stir. Allow the spinach to wilt for a few minutes before adding the cooked sphagetti and Gorgonzola cheese to the skillet. Stir together and cook for another minute or two until the sphagetti is warm and all ingredients are well combined.

5. Serve sphagetti warm and enjoy!
