Crispy “Pork Fiesta” Tacos

The following ingredients are needed to make Crispy Pork Fiesta Tacos:

-1 lb. pork tenderloin
-2 cloves garlic, minced
-1 tsp. chili powder
-1 tsp. cumin
-1 tsp. oregano
-1/2 tsp. paprika
-1/2 cup brown sugar
-1/4 cup olive oil
-1/4 cup lime juice
-1/2 cup cilantro
-Salt and pepper to taste
-2 cups cooked black beans, drained
-2 bell peppers, diced
-1 large onion, diced
-1 cup shredded cheese
-1 package taco shells
-Sour cream, for topping


1. Begin by marinating the pork. In a bowl, combine the garlic, chili powder, cumin, oregano, paprika, brown sugar, olive oil, lime juice, cilantro, and salt and pepper. Add the pork, making sure to coat all sides with the marinade. Place in the refrigerator for one hour.

2. Preheat the oven to 400°F.

3. Place the pork on a lightly greased baking sheet and bake for 15 minutes, or until the internal temperature reaches 145°F.

4. Heat a skillet over medium-high heat and add the bell peppers and onion. Sauté for 5 minutes, or until the vegetables are soft. Add the cooked black beans and sauté for an additional 2 minutes.

5. Cut the pork into slices and stir into the vegetable mixture. Cook for an additional 5 minutes, stirring frequently.

6. Heat the taco shells in a large skillet over medium heat.

7. Fill each taco shell with the pork mixture and sprinkle the cheese on top.

8. Serve with sour cream and enjoy!
