For those following the Keto diet, lasagna can seem like a forbidden food. However, there are ways to modification the classic Italian dish to create something that is still delicious, low-carb and suitable to the Keto diet. By using zucchini as a base, and replacing the pasta with eggplant, this Mega-Cheesy Keto Lasagna is a perfect way to satisfy your lasagna cravings.

The main attraction of lasagna is the layers of cheese, and this version doesn’t skimp on the cheese, with a combination of ricotta, Parmesan and mozzarella for that classic flavor. If you’re not a fan of ricotta, you can substitute it for cottage cheese if you prefer – it works just as well.

This Keto-friendly dish is an easy family dinner to throw together, and is sure to impress everyone. The ingredients may sound complicated, but don’t be deterred – it is easy to make and takes no time at all.


– 2 tablespoons of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 pound of ground beef
– 1 24-ounce jar of tomato sauce
-1/2 teaspoon of Italian seasoning
– 1/2 teaspoon of salt
– 1/4 teaspoon of pepper
– 2 large zucchinis, finely sliced
– 2 large eggplants, finely sliced
– 1 cup of ricotta cheese
– 1/2 cup of Parmesan cheese
– 1/2 cup of mozzarella cheese


1. Preheat oven to 375 degrees Fahrenheit.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add onion and garlic, and cook until fragrant and onion is translucent, about 5 minutes.
4. Add ground beef and cook until browned, about 8 minutes, stirring occasionally.
5. Add tomato sauce, Italian seasoning, salt, and pepper. Stir to combine and reduce heat to medium-low.
6. Simmer for 10 minutes.
7. Grease a 9×13 inch baking dish.
8. Lay the zucchini slices in the bottom of the dish, overlapping slightly.
9. Spoon the beef and tomato sauce mixture evenly over the zucchini.
10. Top with eggplant slices, again overlapping slightly.
11. Spread ricotta cheese over the top.
12. Sprinkle the Parmesan and mozzarella cheese on top.
13. Bake in preheated oven for 25 minutes, or until cheese is melted and bubbly.
14. Remove from oven and let cool for 10 minutes before serving.

This Keto-friendly lasagna is the perfect way to satisfy your lasagna cravings while still following the Keto diet. The combination of zucchini and eggplant makes a great low-carb base, and the cheeses make this dish irresistible.
