-1 pound of lasagna noodles
-1 tablespoon of olive oil

-1 onion, diced
-3 cloves of garlic, minced
-1/4 teaspoon of oregano
-1/4 teaspoon of thyme
-1 teaspoon of salt
-1/4 teaspoon of black pepper
-1 quart of marinara sauce
-1/2 cup of white wine
-1 container of ricotta cheese
-2 cups of mozzarella cheese, shredded
-1/2 cup of Parmesan cheese, grated
To begin, preheat the oven to 375 degrees. Next, bring a large pot of salted water to a boil and cook the lasagna noodles for about 10 minutes, or until they’re al dente. Once cooked, drain the noodles and set aside.
Next, heat the olive oil in a large skillet over medium-high heat and add the mushrooms, onions, garlic, oregano, thyme, salt, and pepper. Saute until the mushrooms are softened and the onions are translucent.
Add the marinara sauce and white wine to the mushroom mixture and simmer for about 10 minutes. Then, remove the skillet from the heat and stir in the ricotta cheese until it’s well blended.
In a 9×13-inch baking dish, ladle a small amount of the mushroom mixture to the bottom and spread it out to form a thin layer. Place 2 noodles on top of the sauce and spread half of the mushroom mixture over the noodles. Sprinkle with half of the mozzarella and Parmesan cheese.
Repeat with the noodle, sauce, and cheese layers. Bake for 30 to 35 minutes, or until the cheese is melted and bubbly. Let the lasagna stand for about 10 minutes before serving.
