Cheese has been gaining quite the spotlight lately due to its health benefits. It’s packed full of essential vitamins and minerals, as well as protein and calcium. Cheese can also be incredibly versatile when it comes to incorporating it into recipes. Low-carb cheese nuggets are a healthy and tasty option that can be enjoyed as an appetizer, a snack, or even as part of a meal.
• 4 ounces of shredded cheese (mozzarella, cheddar, or a blend)
• 2 eggs
• 2 tablespoons of flour
• Salt and pepper to taste
• Optional: 4 tablespoons of crumbled bacon (or other toppings of desired)
1. Preheat oven to 400 degrees Fahrenheit.
2. In a bowl, mix together the shredded cheese, eggs, and flour. Season to taste with salt and pepper.
3. Roll the mixture into small balls, approximately 1 ½ inches in diameter. Place the balls on a baking sheet lined with parchment paper.
4. Bake for 15 minutes, or until golden brown. (Note: if desired, you can add the crumbled bacon to the tops of the balls before baking.)
5. Allow to cool before serving.
