Loaded Keto Taco Bowls

Loaded Keto Taco Bowls


1 lb. ground beef

2 tablespoons extra-virgin olive oil

½ teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

¼ teaspoon black pepper

½ teaspoon sea salt

2 cups bell peppers, chopped

2 cups zucchini, chopped

1 (15 oz) can black beans, drained and rinsed

1 cup cherry tomatoes, halved

Sharp cheddar cheese, shredded

4 cups riced cauliflower


1. Preheat the oven to 375 F. Grease a large baking dish with olive oil.

2. In a large skillet, heat extra-virgin olive oil over medium-high heat. Add the ground beef and garlic powder. Cook, breaking the beef apart with a spoon, until it is nicely browned.

3. In a small bowl, combine the cumin, chili powder, pepper, and salt. Mix well. Add the mixture to the browned beef and stir to combine.

4. Next, add the bell peppers, zucchini, black beans, and cherry tomatoes to the beef mixture. Stir all of the ingredients together and cook for an additional 3-4 minutes or until the veggies are tender.

5. Spread the riced cauliflower on the bottom of the greased baking dish. Top with the beef and veggie mixture, spreading it out evenly.

6. Sprinkle the shredded cheese on top.

7. Bake for 20-25 minutes, or until the cheese has melted and is lightly browned.

8. Serve warm.
