Ingredients

1 1/2 lbs salmon filets

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon pepper

4 tablespoons butter

3 tablespoons freshly squeezed lemon juice

3 tablespoons honey

2 tablespoons fresh parsley, chopped

Instructions

Preheat your oven to 350 degrees F. Place a piece of foil on a baking sheet and spray with non-stick cooking spray. Place salmon on the baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Bake for 15-20 minutes, depending on the thickness of your salmon, until salmon is flaky and cooked through.

Meanwhile, melt the butter in a small saucepan. Add the honey and lemon juice and stir until combined. Set aside.

When the salmon is cooked, brush with the honey-lemon glaze and sprinkle with parsley. Place back in the oven for 3-5 minutes.

Remove from the oven and serve with your favorite sides. Enjoy!

Tips

-If you like your salmon crispier, add a few minutes more to the baking time.

-If you don’t care about making a mess, you can brush the glaze directly onto the salmon instead of using a saucepan.

-Be sure not to overcook the salmon.

-For an extra layer of flavor, top with feta cheese before baking.

– You can use any type of salmon filet.

-If you don’t have fresh parsley, dried will work too.
