Keto Mexican Shepherd Pie

If you’re looking for a delicious, filling and nutritious dinner, you can’t go wrong with a classic Mexican Shepherd Pie. The Mexican Shepherd Pie combines ingredients and flavors of classic Mexican cuisine with ingredients commonly found in traditional shepherd pies. This Keto Mexican Shepherd Pie has all the flavor of a classic dish but without any of the carbohydrates and calories that in most versions. This version is low in carbohydrates and fat, making it appropriate for people following a ketogenic diet. It’s easy to prepare and uses basic European ingredients.

Ingredients Needed for Keto Mexican Shepherd Pie

This recipe serves four people.

-Ground Beef: 1 pound (455 g)

-Garlic cloves: 3-4, minced

-Onion: 1 medium, diced

-Bell pepper: 1, diced

-Jalapeño pepper: 1, diced (seeds removed to make it less spicy)

-Tomato paste: 1 tablespoon (15 ml)

-Chili powder: 1 tablespoon (15 ml)

-Cumin: 1 teaspoon (5 ml)

-Cilantro: 1/4 cup (60 ml), chopped

-Cheddar cheese: 1/2 cup (120 ml), grated

-Cream cheese: 4 ounces (120 g)

-Sour cream: 1/4 cup (60 ml)

-Salt: to taste

-Ground black pepper: to taste

-Heavy cream: 2 tablespoons (30 ml)

-Egg: one

-Olive oil: 2 tablespoons (30 ml)

For the Crust

-Almond flour: 1 and 1/2 cup (355 ml)

-Egg: 1

-Coconut oil or butter: 1/4 cup (60 ml), melted

-Salt: to taste

Instructions

1. Preheat the oven to 350°F (176°C), and lightly grease a 9-inch (22 cm) deep-dish pie pan with olive oil or butter.

2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and garlic and cook until the beef is no longer pink.

3. Add the onion, bell pepper, jalapeño pepper and tomato paste and cook until the vegetables are tender, about 5 minutes.

4. Add the chili powder, cumin and cilantro and stir until combined.

5. Reduce the heat to low and add the cheddar cheese, cream cheese, sour cream, salt and black pepper, stirring until combined.

6. Remove from the heat and set aside.

7. In a medium bowl, whisk together the almond flour, egg, melted coconut oil or butter, and salt.

8. Spread the crust mixture into the greased pie pan, pressing evenly to form an even layer.

9. Pour the beef mixture into the crust, spreading evenly.

10. In a small bowl, whisk together the heavy cream and egg and pour the mixture over the beef.
