-1 head of cauliflower, cut into florets

-1/4 cup bacon fat

-1/4 cup diced onion

-2 cloves garlic, minced

-1 cup heavy cream
-1/2 cup cream cheese
-3/4 cup grated Parmesan cheese
-4 slices cooked bacon, chopped
-Salt and pepper, to taste
-Parsley, for garnish


1. Begin by microwaving the cauliflower in a bowl with a lid for 7-8 minutes. Once done, transfer the cauliflower into a food processor and blend until it forms a rice-like texture. Set aside.

2. In a large skillet over medium-high heat, add the bacon fat. When hot, add the onion and garlic. Cook, stirring frequently, for 3-4 minutes or until the onion is soft and translucent.

3. Add the cream cheese and cream to the skillet, and reduce the heat to medium. Cook, stirring frequently, until the cream cheese has melted and the cream has reduced by half, about 5 minutes.

4. Add the cauliflower, Parmesan cheese, and bacon. Cook, stirring frequently, for 4-5 minutes or until the cauliflower is cooked through and the Parmesan is melted.

5. Season with salt and pepper, to taste. Garnish with parsley, if desired, and serve warm. Enjoy!
