Keto Beef Enchilada Bake

– 2 Cups Beef Broth

– 1/2 teaspoon onion powder
– 1/2 teaspoon oregano
– 1/2 teaspoon paprika
– 1/2 teaspoon black pepper
– 1/2 teaspoon sea salt
– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 2 lbs ground beef
– 8 Corn tortillas, cut into 1-inch strips
– 1/2 cup sour cream

Instructions:

1. Preheat oven to 375°F.

2. In a medium bowl, mix together the beef broth, red enchilada sauce, garlic powder, chili powder, cumin, onion powder, oregano, paprika, black pepper and salt. Set aside.

3. Heat olive oil in a large skillet over medium heat. Add in the chopped onion and minced garlic and cook until softened, about 5 minutes.

4. Add the ground beef to the skillet and cook until browned and cooked through, about 7-8 minutes.

5. Add the enchilada sauce mixture to the ground beef and mix until fully incorporated. Bring to a simmer and cook for 10 minutes, stirring occasionally.

6. Grease a 9×13 inch baking pan with the remaining olive oil.

7. Spread half of the beef mixture in the bottom of the baking pan. Layer the corn tortilla strips on top of the beef.

8. Spread the remaining beef mixture on top of the tortillas. Top with shredded cheese and spread sour cream over the cheese.

9. Bake in the preheated oven for 18-20 minutes until cheese is melted and bubbly.

10. Let the Keto Beef Enchilada Bake sit for 5 minutes before serving. Enjoy!
