Feta-Stuffed Cauliflower Souffle

Cauliflower has come to be known as one of the most versatile vegetables to cook with in recent years. From being used as a low-carb substitute for rice and potatoes to being used in healthy snacks such as zucchini fritters, cauliflower continues to provide endless culinary inspiration. But, if you are looking for something truly unique, consider trying Feta-Stuffed Cauliflower Souffle. This simple yet impressive dish is sure to be a hit with everyone at the dinner table.

In this recipe, we are using a head of cauliflower, feta cheese, and a few other pantry staples to create a delicious and creamy dish with notes of garlic, Parmesan, and Italian seasoning. The feta cheese gives the souffle a salty tang, while the Parmesan and Italian seasoning provide earthy flavor.

In this recipe we begin by preheating the oven to 375°F (190°C). We then cut off the leaves and stem of the cauliflower, leaving just the head. Cut the head in half, so you have two halves. Separate the florets of the cauliflower by removing them from the stem and break them apart. The result should be florets ranging in size from small to large, all with a uniform shape.

Next, place the cauliflower florets in a large bowl and add 3 tablespoons of olive oil. Toss the cauliflower in the oil and spread on a greased baking sheet. Roast in preheated oven for 15-20 minutes, or until golden and tender.

In the meantime, in a medium bowl mix together the ingredients for the souffle. This includes 2 tablespoons olive oil, 4 ounces of feta cheese, 1/4 cup Parmesan cheese, 1/2 teaspoon garlic powder, 1 teaspoon Italian seasoning, 1/4 teaspoon red pepper flakes, and 1/4 teaspoon of black pepper. Mix all the ingredients together thoroughly.

Once the florets are done cooking, remove them from the oven. Reduce the oven temperature to 350°F (175°C). Grease the interior of a medium-sized baking dish and place the cooked florets inside. Top the florets with the feta mixture from the bowl and spread it evenly.

Cover the baking dish with foil and bake in the oven for 15 to 20 minutes. Once done cooking, remove the foil and turn the oven off. Raise the temperature to 375°F (190°C) and bake uncovered for another 5 to 10 minutes, or until golden and bubbling.
