• 2 large eggplants, sliced into 1/4 inch pieces

• 1 tablespoon olive oil

• 2 garlic cloves, minced

• 1/4 teaspoon dried oregano

• 1/4 teaspoon red chili flakes

• 1 cup Marinara sauce

• 1 cup shredded mozzarella

• ½ cup freshly grated Parmesan cheese

• Fresh Basil leaves for garnish


1. Preheat the oven to 200C degrees. Grease a 9×13 inch baking pan with olive oil and set aside.

2. Place the eggplant slices on a parchment-lined baking sheet and brush each side with olive oil. Sprinkle with oregano and chili flakes. Place in the oven and bake for 15 minutes, flipping the eggplant once at the halfway point.

3. Spread 1/3 cup of the marinara sauce over the bottom of the prepared baking pan. Place the roasted eggplant slices on top of the sauce.

4. Sprinkle the mozzarella over the eggplant and then top with the remaining marinara sauce.

5. Sprinkle the Parmesan cheese over the top.

6. Bake the casserole in the oven for 25 minutes.

7. Remove from the oven and let cool for 10 minutes before serving. Garnish with freshly chopped basil.
