Ingredients

For the Chicken:

-2 lb chicken thighs, boneless and skinless
-3/4 cup sesame seeds
-1/2 cup almond flour
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/2 teaspoon black pepper
-1/4 cup avocado oil

For the Sauce:

-2 tablespoons coconut aminos
-1 teaspoon sesame oil
-1/2 teaspoon rice vinegar
-1 tablespoon maple syrup
-1/4 teaspoon ginger powder
-1/4 teaspoon garlic powder
-3 tablespoons water

Instructions

1. Preheat the oven to 400 F degrees. Line a large baking sheet with parchment paper, and set aside.

2. In a shallow bowl, mix together the sesame seeds, almond flour, garlic powder, salt, and black pepper.

3. Rub the chicken thighs in the sesame seed and almond flour mixture. Make sure each thigh is fully coated.

4. Heat the avocado oil in a large skillet over medium high heat. When the oil is hot and shimmering, add the chicken thighs. Cook until golden brown and crispy on each side, about 4 minutes per side.

5. Once the chicken is cooked, place it on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes.

6. While the chicken is baking, prepare the sauce. In a small bowl, whisk together the coconut aminos, sesame oil, rice vinegar, maple syrup, ginger powder, and garlic powder.

7. Place the skillet back on the stove over medium heat. Add the sauce to the skillet and whisk in the 3 tablespoons of water. Bring the mixture to a boil, stirring constantly.
