Coconut-Lime Keto Tacos Recipe

If you’re trying to stay low-carb but still enjoy a tasty taco, then Coconut-Lime Keto Tacos might just be the perfect solution. With a rich and flavorful coconut-lime marinade that’s sure to tantalize the taste buds, these tacos bring zesty flavor and juicy texture to the table. Best of all, they’re keto-friendly, so you don’t have to worry about blowing your diet! Here’s how to make them:

For the marinade

• ¼ cup coconut aminos
• 2 tablespoons tomato paste
• 2 tablespoons fresh lime juice
• 2 tablespoons extra-virgin olive oil
• 2 cloves garlic, minced
• 1 teaspoon finely chopped fresh ginger
• 1 teaspoon salt
• ½ teaspoon freshly ground black pepper

For the tacos

• 2 tablespoons olive oil
• 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
• 1 red bell pepper, julienned
• 1 yellow bell pepper, julienned
• 1 small onion, cut into thin wedges
• 8 keto tortillas
• 1 cup shredded cabbage
• 1 tablespoons chopped fresh cilantro
• Sliced avocados, limes, and jalapeños for garnish (optional)

1. In a medium-sized bowl, whisk together the marinade ingredients – coconut aminos, tomato paste, lime juice, olive oil, garlic, ginger, salt, and pepper – until everything is well combined.

2. Place the cubed chicken in a large resealable plastic bag, pour in the marinade, and seal the bag. Shake the bag until the chicken is evenly coated in the marinade. Refrigerate for at least 30 minutes.

3. Preheat a large skillet over high heat. Add the olive oil and when it’s hot, add the chicken and marinade. Cook, stirring frequently, for about 8 minutes until the chicken is cooked through.

4. Remove the chicken from the skillet and transfer to a plate. Add the bell peppers and onion and cook for 4-5 minutes until the vegetables are slightly softened.

5. Meanwhile, warm the keto tortillas according to package instructions.

6. To assemble the tacos, place a piece of chicken in each tortilla and top with the bell peppers and onion. Sprinkle with shredded cabbage and fresh cilantro.

7. Serve the tacos garnished with slices of avocado, limes, and jalapeños, if desired. Enjoy!

These Coconut-Lime Keto Tacos are an easy and delicious way to enjoy tacos without sacrificing flavor or dietary restrictions. The marinade really adds depth of flavor to the chicken, while the bell peppers and onion add crispness and crunch to the overall dish. Meanwhile, the keto tortillas provide a perfect wrapper for all of the fillings. Best of all, because these tacos are low-carb, you don’t have to worry about eating too many.

Feel free to tweak the ingredients according to your dietary preferences and tastes. You could try substituting different vegetables or even adding in some diced tomato
