Ingredients:

• 1 pound of large shrimp, peeled and deveined

• 2 tablespoons of freshly squeezed lime juice

• 2 tablespoons of olive oil

• 1 teaspoon of ground cumin

• ¼ teaspoon of smoked paprika

• 2 cloves of garlic, minced

• 1 jalapeño, seeded and minced

• 2 tablespoons of chopped fresh cilantro

• Salt and pepper, to taste

• 2 cups of cooked white rice

• 1 cup of diced tomatoes

• ½ cup of sliced bell pepper

Instructions:

1. To begin, prepare the marinade for the shrimp. To do so, add the lime juice, olive oil, cumin, smoked paprika, garlic, jalapeño, cilantro, and salt and pepper to a bowl and whisk until combined.

2. Add the shrimp to the marinade and mix until thoroughly coated. Cover and refrigerate for at least 2 hours before cooking.

3. Heat a large skillet over medium-high heat. Once hot, add the shrimp and marinade to the skillet. Cook for 4-5 minutes, stirring occasionally, or until the shrimp is pink and cooked through.

4. Once cooked, remove the shrimp from the skillet and set aside.

5. To assemble the bowls, divide the cooked white rice, diced tomatoes, bell peppers, and shrimp among four bowls.

6. Serve the bowls warm, topped with any additional desired ingredients, such as chopped cilantro, guacamole, salsa, jalapeños, or diced avocado.
