After baking, switch the oven to a low broil setting and cook for an additional 5 minutes, until the cheese is melted and bubbling.

Once out of the oven, let cool for 10 minutes before serving. Serve the enchiladas warm with a side of refried beans, shredded lettuce, diced tomatoes, and chopped avocado.
