Ingredients
Pastry
– 2 cups all-purpose flour
– 1 tsp salt
– 2/3 cup of cold butter
– 1/4 cup cold water
Quiche
– 15 ounces of cooked sausage
– 2 cups of grated cheese (your favourite kind)
– 5 eggs
– 1 ½ cups of milk
– 2 tablespoons of chopped fresh parsley
– 1 teaspoon of salt
– ½ teaspoon of black pepper
Directions
1. Preheat oven to 425 degrees F.
2. To prepare the pastry, sift the flour and the salt into a large bowl, or food processor.
3. Cut the butter into the flour using a pastry cutter or two knives, until the mixture resembles a coarse meal.
4. Add the cold water, one tablespoon at a time, and mix with your hands until the dough begins to come together.
5. Form the dough into a ball and wrap in plastic wrap. Refrigerate for at least fifteen minutes.
6. While the pastry is refrigerating, spread the cooked sausage and grated cheese over the bottom of a 9-inch pie plate.
7. Whisk together the eggs, milk, parsley, salt, and pepper in a separate bowl. Pour the egg mixture over the sausage and cheese in the pie plate.
