“Cheesy Keto Spinach Pie”

Cheesy Keto Spinach Pie

Ingredients:

Crust:

1cup almond flour

1cup coconut flour

¼cup butter

2tbsp water

Filling:

1tbsp olive oil

2cloves garlic, minced

2cups spinach leaves

1tsp dried oregano

2oz goat cheese or cream cheese, crumbled

Juice of ½ lemon

Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. In a food processor, blend together almond flour, coconut flour, butter, and water until it forms a ball.

3. Grease a 9-inch pie pan and press the dough into the pan to form the crust.

4. Bake the crust in the preheated oven for 12 minutes.

5. Meanwhile, heat the chopped garlic in the olive oil over medium heat in a large skillet. Add the spinach and cook until wilted, about 5 minutes.

6. Add oregano, goat cheese, lemon juice, salt, and pepper, stirring to combine.

7. When the crust is done, spread the spinach mixture on top of the crust, spreading evenly.

8. Bake for an additional 18 minutes, or until the edges of the crust start to turn golden brown.

9. Let cool before serving. Enjoy!
