– 4 jicama (or lettuce) wraps
– 2 cups shredded cheddar cheese
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– 1/4 teaspoon smoked paprika
– 1 tablespoon olive oil
– 1 can (10 ounces) red enchilada sauce
– 1/2 cup low-fat sour cream
– 1/2 cup diced tomatoes
– 1/4 cup diced cilantro
– 1/4 cup sliced olives, optional


1. Preheat the oven to 350 degrees F. Grease an 8-inch baking dish.

2. In a medium bowl, combine the cheese, chili powder, garlic powder, and smoked paprika.

3. Heat the olive oil in a large skillet over medium heat.

4. Dip each tortilla in the enchilada sauce and lay in the pre-greased baking dish.

5. Divide the cheese mixture among the tortillas, spreading evenly.

9. Remove the baking dish from the oven and top with the sour cream mixture and sliced olives.

10. Bake for an additional 15 minutes.
