Ingredients:

– 4 jicama (or lettuce) wraps
– 2 cups shredded cheddar cheese

– 1 can (10 ounces) red enchilada sauce
– 1/2 cup low-fat sour cream

Instructions:

1. Preheat the oven to 350 degrees F. Grease an 8-inch baking dish.

7. Bake the enchiladas for 10 minutes.

8. Meanwhile, in a small bowl, mix together the sour cream, diced tomatoes, and cilantro.

9. Remove the baking dish from the oven and top with the sour cream mixture and sliced olives.

10. Bake for an additional 15 minutes.
