– 6 slices of thick-cut bacon, diced
– 2 cups red cabbage, shredded
– 2 cups green cabbage, shredded
– 6 eggs
– 2 teaspoons olive oil
– ¼ teaspoon salt
– ¼ teaspoon freshly ground black pepper
– ¼ cup feta cheese, crumbled


1. Heat a large skillet over medium-high heat. Add the diced bacon to the skillet and cook until crisp.

2. Stir in the cabbage and cook until tender, about 3 minutes. Remove the bacon and cabbage to a bowl and set aside.

3. In a medium bowl, beat the eggs and season with salt and pepper.

4. Add the olive oil to the skillet and heat to medium.

5. Pour the eggs into the skillet and cook, stirring occasionally, for 4 minutes.

6. Add the bacon and cabbage to the pan, stirring until combined.

7. Top with the feta cheese.

8. Reduce the heat to low and cook for 8 minutes, or until the eggs are set and the cheese is melted.
